Im roughly in the middle of my 48-hour cross-country AMTRAK journey. This might take roughly 12 times the duration of a direct flight but this has been extremely stress free and everyone along the way has been delightful

Its been a wild couple of weeks at work so Ive been pretty absent from internet posting.
Im on vacation now though, so get ready for train trip photos and travel hangout vibes!

My friends got me a planter for my birthday! It keeps the plant watered by “drinking” the water out of the dish

I had a team brainstorm meeting so I bought this bonus HMart snack.

These are like oreos but *way* *fancier*!


Haha jk actually from there you go to that step in Part 1 about blending everything together.

Yesterday I got everything blended and stirred and seasoned, and now a little over a quart of salsa is resting in the fridge for a day or two to let the flavors really set in.

If anything, I’m worried that I didn’t make it spicy enough and it doesn’t taste enough like anything thats in there, but we’ll see.

How, Part 2:

Maybe line your baking sheet with foil so you don’t forget that the liquid that cooks out of tomatillos is sticky and bakes into a hard brown crust.

But look at those roasty lil guys!

How, part 1:

Cut all the veg in half

Put everything except the onion on a baking sheet (with edges) and roast in the oven for about five minutes per side on real hot

Take those out and while they’re cooling on the stove, dice up the onions real small, rinse them in a colander, and drain

Blend up everything from the baking sheet with ~1/4cup water, then stir in the onions and salt to taste

6 medium tomatillos

One jalapeno

Two serranos

One big white onion

3-4 large garlic cloves but I used two because I have the spicier kind
